WHITE BEANS WITH SALSICCIA SMOKED PAPRIKA
This recipe for white beans with Nonna Elide's Salsiccia smoked paprika is inspired by a classic Spanish dish. With simple ingredients like slow-cooked beans, vegetables and salsiccia, it becomes a hearty stew that really fills you up. Perfect for you who want a rustic, flavourful meal with Mediterranean influences. It takes time to make, but the result is worth the wait – serve with a slice of bread to soak up all the goodness!
ingredients
- 300 g white beans (dry weight, soaked for 12 hours)
- 1 leek, white part
- 2 carrots
- 1 onion
- 1/2 head of garlic
- 1 tomato
- 300 g Nonna Elide's Salsiccia smoked paprika
- 1 bay leaf
- 1 tsk paprika powder
- Freshly ground black pepper
- 2 msk olive oil
- 1 tsk salt
- Flat-leaf parsley, for garnish
Here's how
- Soak the beans for 12 hours. Drain off the water and rinse them.
- Cut and peel the leek, carrots, garlic and onion.
- Place the beans in a large pot together with the vegetables, the salsiccia, bay leaf, paprika powder, black pepper and olive oil. Cover with water and bring to the boil.
- Lower the heat and let simmer for 1.5 hours until the beans are soft. Skim off the foam that forms on the surface at the beginning of cooking.
- Lift out the vegetables, blend them with a blender or hand blender and put them back in the pot. Optional: Strain the blended vegetables for a smoother consistency.
- Season to taste with salt and let simmer for a further 10 minutes.
- Lift out the salsiccia, remove the skin and cut it into slices before serving.
- Garnish with chopped parsley and serve with a few slices of really good bread on the side.
