CHORIZO CON PAPAS
Chorizo and potatoes – an unbeatable combination that always delivers! This simple base recipe is packed with flavour and is just as good for breakfast as for lunch. Inspired by Mexican food culture, where quality ingredients are the focus, we've made our version with Nonna Elide's chorizo mince. Unlike Mexican chorizo, which often contains chilli, our mince is seasoned with pimentón – smoked paprika – for a round, full flavour.
In Mexico, papas con chorizo is often served just as it is, or as a filling in tacos or burritos. Add fried eggs, avocado or frijoles refritos (refried beans) for an extra filling meal. A simple recipe that's just as good every time!
ingredients
- 500 g firm potatoes, peeled and diced
- 400 g Nonna Elide chorizo mince
- salt
Here's how
- Boil the potatoes in plenty of salted water for about 15 minutes, or until lightly soft. Drain the water and let the potatoes drain thoroughly.
- Fry the chorizo in a large frying pan over medium-high heat for 8–10 minutes, breaking it up with a spatula as it cooks.
- Add the boiled potatoes to the chorizo and let the potatoes cook along for another 5 minutes. Stir gently so the potatoes don't fall apart.
- Season to taste with salt and serve!
